Fresh Green Detox Salad

This recipe goes along with the 2014 Hungry For Change 3 day detox and is a huge favorite. The avocado in this detox salad brings a richness that is needed and makes the salad a completely filling meal. The crunch of the greens and the brightness of the super simple dressing make this a detox salad that you’ll want to eat at any time! (I added celery to the photo version for extra crunch)

Makes 1 serving

Ingredients:

  • 1 bunch bitter greens (arugula, dandelion greens, endive, mustard greens)
  • 1 avocado
  • ½ cucumber
  • Handful fresh parsley and cilantro
  • 1 tsp apple cider vinegar
  • 1 tbps extra virgin olive oil
  • Juice of ½ lemon

Directions:

  1. Rinse greens and lay in a bowl
  2. Chop avocado, cucumber, parsley and cilantro and top over greens
  3. Mix apple cider vinegar, extra virgin olive oil, and lemon juice in a glass and drizzle over salad
  4. Optional: top with seaweed flakes for extra flavor and nutrients
