Citrus Coconut Refresher (Mocktail)

This is one of my favorite drinks. It’s hydrating, tasty, and bubbly. I’m calling it a “refresher” and a “mocktail” because it feels like a bit of both! This is great if you need to rehydrate and water just isn’t floating your boat. Also a great transition if you are weaning yourself off of soda or other sugary drinks. It tastes a lot like the lemon/lime varieties of soda, just not as sweet. The coconut water here acts as a natural version of so-called “energy drinks” to keep you ultra hydrated. You can lemons or limes or both, I just happened to have lemons on hand. Alter the ratio of citrus, coconut water, and seltzer to your taste. If you want to make it a real cocktail, a splash of vodka would do nicely here!

Makes 1 serving

Ingredients:

  • 1 large lemon wedge
  • 1/2 cup coconut water
  • 1 1/2 cups seltzer water

Directions:

  1. Squeeze lemon wedge into glass over ice
  2. Add coconut water and seltzer
  3. Insert drinking straw and enjoy!
